I guess I will just start posting my recipes here if you don't mind.

Here is another marinade that my husband likes. I like to use fresh squeezed orange juice when I have it.

GRILLED MAHI MAHI



4 to 5 MAHI MAHI; Fillets.
1/2 cup(s) ZESTY ITALIAN SALAD DRESSING
1/4 cup(s) ORANGE JUICE
3 teaspoon(s) LIME JUICE
2 tablespoon(s) YOSHIDA'S SAUCE; Or Teriyaki Sauce.
1/4 teaspoon(s) SWEET CHILI SAUCE
1/4 teaspoon(s) CAYENNE PEPPER; To Taste.
1 teaspoon(s) GARLIC; Minced.
1 GREEN ONION; Chopped.

Mix together all the ingredients except the fish.
Add fish and let marinade for about 2 to 4 hours in the refrigerator.
Lightly oil grill.
Place fish on grill and cook about 5 minutes on each side depending on thickness, fish should flake easily when done.

It’s always fun to make sandwiches in a pie iron while out camping. This one is really good.

PIE IRON MONTE CRISTO SANDWICH

2 slice(s) BREAD
2 slice(s) HAM
2 slice(s) TURKEY
2 slice(s) AMERICAN CHEESE
1 EGG
1 tablespoon(s) MILK
POWDERED SUGAR

Mix the egg and milk together, dip bread in milk egg mixture to coat the bread.
Place one slice of coated bread in seasoned pie iron.
Lay the meat and cheese on top of the bread, top with other slice of coated bread.
Cook for about 5 minutes on each side or until done.
Sprinkle with powdered sugar.

also try a honey mustard glaze when grilling shark or baracuda, when it is plated add a dusting of cayanne pepper.:mad:
