Mustang Island will be your better selection for being close to touristy stuff; however there is nothing compared to sweeping sand out of a trailer after camping at the beach. IT WILL get into everything.
Winter is my favorite time to go to the beach down here. Lots of bechcombing opportunity, and no crowds.
Lake Corpus Christi SP has some very nice campsites there; plenty of wooded sites. Very little in hiking trails, and not really much to look at on the drive between Corpus Christi and Mathis, unless you go by way of old San Patricio. That's a long way around, however.
