Welcome aboard, Kelly! Hope I can help a bit. Mineral Wells is one of the parks we've been to a number of times. Haven't been out there lately and that really is a loss for me.
Best sites as far as we are concerned are as follows:
#55 in "Live Oak Area": Very shaded and private. A little tight for a large RV but great for a smaller one, Hybrid, PUP or "tent" camper.
#53 in "Live Oak Area": Very large but not as shaded. Good privacy due to the trees and brush. Site is large enough to support an RV and a tent or two tents (have done this with friends a number of times).
#86 in "Plateau Area": Large, well shaded site. Easy "In/Out" for an RV.
All of the above are "Power&Water" sites. If your not needing eletricity, almost anything in the "Post Oak" area is nice. Area is very "mature" with well shaded sites. Almost wish they'd run electricity in there so we could camp there again but that would ruin it.
I'm going to add a cut from another post I wrote about this park a year ago. I really need to write a full review about MW but I have get out there and gather the last of the information and pictures I need for it. I keep saying I'm going to do it but each time DW and I get out camping, we seem to end up going in the wrong direction
! Going to have to get this done.

Mineral Wells is one of the parks we frequent and enjoy. Sites are fairly well spaced out with trees and brush offering some seclution. One of the best features of the park is the fact that the camping area is on one side of the lake and the "Day Use" area is on the other. A very good arrangement as far as I'm concerned. There is extensive hiking in the park with some moderate challenges and you also have access to the Mineral Wells State Trailway off of the "Day Use" area. Also connected with the "Day Use" area is Penitentiary Hollow, an area were many enjoy rock climbing and repelling. At my age, that's a bit beyond me but I do enjoy watching and taking the stairs to the bottom of the hollow. The lake offers fair to good fishing for crappie and cats. Have had little luck with bass though I know others who have. Park Store leaves a lot to be desired but you'll find a Wal-Mart and other stores about 4 miles west of the park road entrance.
