You're making me wish I'd made note of the park signs along the Maple Trail that specify the various fish species found in the waters! Sadly, all I remember is Guadalupe bass and other bass species, but the latter's about as helpful as if I just told you "there's fish!"

I was hoping to find more species mentioned for the Sabinal River (runs through Lost Maples State Natural Area) on Texas Parks & Wildlife's (TPWD) State Fish Records site,
but there's just one species currently listed -- channel catfish.

Can't help on bait recommendations since I'm not a fisherwoman, though I like a good fish meal as much as the next person!

Hunt around on Google.com a bit and you might find some more info... here's a link for starter's:A Google search for "Sabinal River" + "fish"
