Houston has a club called Bayou City Outdoors that does a lot of social stuff and a little camping. There is also a branch of the Sierra Club that's likely to do some camping trips. I think the most Adventure Club-ish group I've been involved with is thebackpacker.com. There are several trips a month you can sign up for in the trips section where you will meet some very social people who get together for backpacking trips. But there's almost never a trip in Texas - most are in the east. Then there's the humble Yahoo group Simple Hikers In Texas that gets together for a backpacking trip a couple times a year.
