Rocky Mountain NP - you should check it out. Lots of hiking, but it may be high-altitude. I have never been, but my brother (impossible to please) has gone 3x and is still crazy for it.

We stayed at several City and State Parks in Colorado and I was amazed that most every one had an area of each park devoted to an activity: flying model planes, birding, hiking, camping. I'll have to dig through archives and see if I can find those names of the parks.

Colorado is beautiful. It can snow on you at any time if you are high enough. We drove from Colorado to Texas in June of last year and we were in the snow.
