Guadalupe River is one of our favorite parks and have been there more then a few times. Though we don't use Wagon Ford, it is a very nice part of the park and you should be happy with it. Sites are spread out well but even though there is good shade, there is little privacy. Area is "open" with high, over-hanging tree branches.
If your interested in tubing and kayaking, I would suggest a trip over to Gruene, Texas. They have a number of outfitters there that should be able to fix you up. I'm going to give you sites to a review on GRSP that I did after our last trip. It includes some info on Gruene that should help you out.
