Wild Texas. I'd love to give you some good suggestions that fit your description, but really, I don't think any state except Alaska can offer you "really remote", "rough it" camping that involves only a few hundred yard's walk before you make camp. If you can get a few hundred yards in, so can the masses. Hence, not "remote", not "wild" and often not even remotely "nature/outdoors" due to car stereos and the like.
I have suggestions if you're willing to hike 2 or more miles into a park, but otherwise, your best bet is to try and camp when no one else is... at least then you'd be among other "hard core" campers and unlikely to have to deal with radios, boom boxes, etc.
