I believe they rope calves (baby cows) and maybe adults (cows = females, bulls = males)... not buffalo. Buffalo are very rare here in the United States -- they were pretty much wiped out during the prolonged fighting between early settlers and the Native Americans (also known as Indians here in the USA.)

Rodeos and roping championships are like the Olymics of cowboy life -- they let the skilled show their talents and compete with other professionals for recognition, prizes (money, scholarships, etc.) and sponshorship contracts (for advertisements). Like the Olympics, there are also many people not a part of "cowboy culture" that enjoy these events as entertainment, and attend them just to enjoy the excitement.
