If you are serious about seclusion, try Lake Houston State Park. Few people frequent it, because it only allows tent camping, it isn't actually on the lake, there's no electricity and they don't even have water at every site. But they do allow fires, there is a clear running creek with a picturesque foot bridge and easy hiking trails. You may run into mountain bikers on the trails but not many.
