Consider
Colorado Bend State Park, as well. I remember watching a fly fisherman in the Colorado River when we went camping there once. I don't know if he caught anything, but he and his fellow fishing buddies seemed to enjoy their trip (stayed the same number of nights we did, and camped nearby).
The
Pedernales Falls SP river frontage is indeed ample, but I'll note the area near the falls does not seem to be fished much. Not having fished, myself, that could just be a coincidence rather than poor conditions (fast-moving water below the falls, leading to deep pools). Most of the folks I see fishing in that section of the park are down by the lower end of the river gorge, near the overhead high-line marker. The portion of the river where swimming is permitted is often deserted, or at least always is when we visit (been there in all seasons, most often in spring and summer), so it may yield opportunities. And a little hiking along the shoreline should certainly find a variety of different water conditions/depths.
Although it's a much smaller park,
Guadalupe River State Park has about 4 miles of river frontage, with fishing permitted on at least half that distance. It can get very slow moving in the summer due to drought and significantly reduced flows from Canyon Lake Dam, but the footpath leads in to some deeper water (and a small area of rapids/faster moving water) downstream and still within the park's boundaries.
I tried fishing once while on vacation in Colorado as a teenager, but I ended up catching plenty of trees
and dunking myself into the water ("Warning: Wet rocks may be slippery!"

). I did catch a rainbow trout once, but that was after my aunt took pity on me and took me to one of those sad little stocked fishing ponds where you buy your bait and rent your tackle and get to hang out until you catch a fish... :rolleyes:
